But then I also see guys flying on top of just a bundle of weeds/vines, a guy flying on a broom shaped tree branch with leaves, and a few other oddities.

in a non-overanalyzing perspective, I think it's just a symbolic thing in reference to western witchery in comics and cartoons that witches fly on brooms. If any mana-possessing mage can make a broom fly, why don't they just cut the middle man and make themselves fly?
