Stuff like Basmati, Jasmine, or that bag of Long Grain from the megamart won't work, because they don't have the right texture, stickiness, and body for the dish. (And dousing Basmati or Jasmine, or other fragrant rice with the Sushi vinegar just winds up tasting funny.) Have fun.
