2013年5月10日 · Well, thanks to this gorgeous chilled sugar snap pea soup, my repertoire just expanded in a very delicious way. Traditionally (from what I hear), chilled pea soups are made with English peas, but thanks to the very user-friendly sugar snap, not only is there no shelling involved here, but I think they impart an even sweeter flavor.

"This is a great soup for a cold day. It's a soup that warms the soul." Rinse peas well in cold water and add to a large cooking pot. Measure 12 cups of water and add to cooking pot. Bring to boil, remove from heat, cover and let sit for 1 hour. Return to stove and bring back to boil.

I'm in a soup mood... I know Chef John has a ton of soup recipes- what have you tried that you loved? Do you have any tips for making your FW soup of choice? I’ve made the Tuscan bean soup more times than I can count. The crispy crouton topping is a must. We made his Beef and Barley soup last week and it was amazing.
