Incredible ostrich races

Tonight I made an ostrich Wellington. I have cooked with ostrich meat a couple of times and I’m always surprised how much ostrich reminds me of beef in taste and texture. The biggest difference is that ostrich is really lean and doesn’t have a lot of fat. I was really excited to see how this turned out as a Wellington.
