🗣️ If you don’t roast vegetables, can I try to convince you to do so? 💁‍♀️ It’s my favorite way to prepare most vegetables, but especially roots like these sweet potatoes. 🍠 High heat = caramelized sugars in the veggies = rich, sweet flavor. 😋 After you roast those sweet potatoes to perfection, toss them in the most delicious Dijon dressing (I used @latourangelle walnut oil here for more fall-ish flavor/omega3s, but olive oil works too!) along with quinoa, greens, cranberries and some creamy
